Spaghetti squash is a great lower carb alternative to use in pasta dishes. Low in calories and high in potassium and vitamin A it's a yummy way to eat healthy. It also yields a whole lot of "pasta" that can get pretty boring if ypizzaou're eating for one or two.

This great recipe was created to make the most of all tha
t leftover squash - but it might be even better than the traditional use! Try it out and enjoy a low carb, delicious alternative to pizza.

Spaghetti Squash Pizza
3 cups cooked spaghetti squash
1 egg
1/2 cup fat free mozzarella
Seasonings to taste (pepper, basil, garlic and salt used here)
Pizza toppings of choice



1.  If you are starting pre leftovers, cook spaghetti squash (there are lots of easy methods, we suggest roasting halved in the oven for 30-40 minutes cut side down with 1/2 cup of water).

2.  Preheat oven to 400 degrees.

3.  After removing strands with a fork, use a sieve or paper towel to remove as much water as possible from the squash. The dryer the squash, the crisper the crust.

pizza 4.  Add squash and additional ingredients to a bowl - except toppings - and combine.

5.  Use a spoon to spread the mixture onto a parchment paper covered cookie sheet (do not skip the parchment). You want the crust to be about 1/4 inch thick.


6.  Bake in the oven for 30-35 minutes, until crisp and slightly browned.

7.  Remove from oven and add your toppings of choice.

8.  Return to oven and bake until cheese is melted and bubbly.
